Brusniki Cake
Filling
100 grams sugar
1/2 teaspoon lemon juice powder
1/4 teaspoon dried lemon zest
1/8 teaspoon salt
2 cups брусники or other tart berries
Combine filling. Set aside.
Cake
3 ounces oil
5 ounces sugar
2 eggs
8 ounces flour
1/2 teaspoon baking soda
1/4 teaspoon salt
4 ounces sour cream
Combine oil and sugar. Add eggs one at a time. Beating well after each. Add flour, baking soda, and salt. Mix dry ingredients a little. Add sour cream. Mix until ingredients are just combined.
Grease a pan (maybe 10x10). Put just enough batter in the bottom to cover it. Try to get the batter up the sides a little. Add berries. Top with remaining batter. Cook in a 325° to 350° F oven for about 30 to 45 minutes.
